This variety of pepper, with its sweet flavor and intense red color, is grown in the province of Potenza.
These are small, elongated peppers characterized by their very low water content, making them perfect for drying.
After harvest, in August, the peppers are dried using the traditional method.
They are then threaded one by one by the stem with needle and thread and arranged into “serte” (necklaces).
The peppers are hung on windows and balconies and left exposed to the sun, so as not to lose their precious properties. This way, their taste and nutritional value remain unchanged throughout the seasons.
Used in cooking, sun-dried peppers bring very valuable benefits to our body.
Indeed, the active compounds contained in the peppers have antioxidant and antimicrobial effects.
Despite their very low cholesterol and saturated fat content, these peppers stand out for their important levels of vitamin A, vitamin C, and folic acid.
