Instructions

  1. Separate the egg yolks from the whites.
  2. Whisk the egg whites until stiff peaks form using an electric whisk.
  3. In a bowl, mix the yolks, butter, milk, and vinegar with a hand whisk.
  4. In a separate bowl, sift the flour, baking powder, and baking soda, then mix by hand together with sugar and salt.
  5. Now, combine the dry ingredients with the wet ones (yolks, etc.) and stir with a hand whisk for a few seconds.
  6. Finally, gently fold in the egg whites using a spatula with upward motions. The pancake batter should be fluid, thick, but not too liquid.
  7. Cook the pancakes in a non-stick pan, preferably small, two at a time. Rub cold butter on the pan with a paper towel so it’s just lightly greased.
  8. Set the heat to low to avoid burning and pour a ladle of batter into the hot pan without pressing it down.
  9. Let cook for a few seconds. As soon as you see the first bubbles on the surface, lift the pancake with a spatula and flip it quickly. Cook for another 20–25 seconds, then place the pancakes on the serving plate.
  10. Do not stack them on top of each other or they will get squashed. Continue cooking until all the batter is used.
  11. Serve with Lucanian wildflower honey. A secret... try them with 3–4 tablespoons of wildflower honey, sliced banana, and roughly chopped walnuts... delicious!!!!!
